Pineapple and Noodle Satay Salad
Any pineapple lovers should try making this noodle salad!
Chargrill fresh pineapple slices for about 5 minutes on a hot griddle and then use in this yummy noodle salad. Simply mix together with noodles of your choice, sliced cucumber, chopped spring onion and a mix of salad leaves. Toss in a dressing made with your favourite satay sauce and some lime juice. Chill for at least an hour. Serve topped with fresh mint leaves and a sprinkling of peanuts. The combination of flavours makes a great salad choice serve simply, or with a protein of your choice. For a gluten free option, look out for BeRight Konjac noodles. They are simple to use, needing just 1 minute in hot water before using.
