Mr Hamfreys Pork Crackle Caesar salad

Simple Caesar salad - what every salad moment needs!


This classic salad dish, just got a whole lot easier and quicker to prepare!

No need to take time making the croutons. You can swap these with some Mr Hamfreys oven roasted pork crackle. This makes this salad gluten free!


Time to make 15 minutes plus chilling time for dressing

Serves 4


10 anchovies, plus extra to serve, optional

4 tablespoons red wine vinegar

3 tablespoons Dijon mustard

2 garlic cloves, peeled

1 large egg

1 cup vegetable oil

1 pack Cos or 4 little gem lettuce, leaves separated and chilled

40g grated or shaved Parmesan cheese

1 pack Mr Hamfreys oven roasted pork crackle, Himalayan salt


1. Place the anchovies, vinegar, mustard and garlic in a processor. Blitz until it forms a smooth puree.

2. Add the egg and process until just mixed in. With the processor running on low, drizzle in the oil until it emulsifies and forms a creamy dressing. Season. Cover with food wrap. Chill for at least 30 minutes to allow the mix to thicken up.

3. Once ready to serve, toss the lettuce leaves in the chilled dressing, gently rubbing the leaves with your hands. (you may not need all the dressing but it keeps well, if chilled)

4. Divide the lettuce leaves between serving bowls. Scatter over the oven roasted

pork crackle. Sprinkle with some Parmesan.

Season and serve with extra freshly ground black pepper. Yummy.
