Kick start your day with these yummy pikelets topped with blueberries and yoghurt.
Simply sift 1 cup of flour into a bowl with 1 teaspoon baking powder, a sprinkling of ground cinnamon and 1/4 teaspoon salt. In another bowl, beat an egg together with 1/4 cup sugar until thick. Add this to the flour with 3/4 cup of milk. Mix until just combined. Heat a non-stick pan that is lightly greased. Then drop spoonfuls of mixture onto it. Cook until bubbles start to appear on the surface, then turn the pikelet. Cook until golden. Serve with blueberries and yoghurt and a mixed berry smoothie.
Makes 10 to 12 pikelets.
